INGREDIENTSNutrition

DIRECTIONS

  1. Mix the dry ingredients together, mix the egg and the water, add to the dry mixture.
  2. Add flour or water to adjust mixture to a very soft dough mixture.
  3. Put dough on a well floured board.
  4. Roll out to about a 1 inch thickness.
  5. Let set for about 15 minutes.
  6. Cut into what ever size you would like.
  7. Batter makes about 25 pieces.
  8. Deep fry in hot oil, just enough to brown on each side.
  9. Put on a paper towel to get some of the oil off of the bread.

      • Pinch pepper
      • 3 eggs, slightly beaten
      • 2 Tbsp butter
      • 2 cups milk



      Instructions


      1. Combine corn, sugar, salt and pepper. Add eggs and mix.
      2. Add butter to milk; heat until butter is melted.
      3. Blend the milk with the corn and egg. Put into a baking dish; bake at 325º F for 1 hour, or until knife comes out clean. Refrigerate any leftovers.

Zebra Berry Crepes

These Zebra Berry Crepes are filled with fresh berries, and drizzled with a rich chocolate sauce, plus a creamy vanilla cashew sauce. Yum!

Ingredients

  • 3/4 Cup Raw Cashews Soaked 2 Hours
  • 1/3 Cup Water
  • 1 Tbsp . Maple Syrup
  • 1/4 tsp . Vanilla
  • 1/4 tsp . Ground Cinnamon
  • Pinch of Sea Salt
  • 1/3 Cup Vegan Chocolate Chips
  • 2 Tbsp . Unsweetened Coconut Milk
  • 1/2 tsp . Coconut Oil
  • 1 1/2 Cups Fresh Blueberries
  • 1 1/2 Cups Fresh Raspberries

Instructions

  1. In a high-speed blender or food processor blend together the soaked cashews, water, maple syrup, vanilla, cinnamon, and sea salt. Place to the side or in the refrigerator while you make the chocolate sauce.
  2. Using the double boiler technique, with a water-filled pot and empty bowl, melt the chocolate chips down.
  3. Once the chips are starting to melt, introduce the coconut milk and oil into the mixture and stir until they are fully combined and have a sauce-like consistency. Let it cool for a couple of minutes.
  4. When your crepe wraps are done cooking in the pan, put about a tbsp. or so of the cashew cream in the center, top with berries and close them.
  5. Each serving is two per-person, so plate them accordingly; then drizzle the cashew cream and chocolate sauce over the top. Garnish with a sprinkle of cinnamon.
These Zebra Berry Crepes are filled with fresh berries, and drizzled with a rich chocolate sauce, plus a creamy vanilla cashew sauce. Yum!
Now, I’m not scared to make these again in the future! Plus, I have a little something extra for you. Because it was just the two of us eating this breakfast, we had some crepe “wraps” left. I found a very good solution for this and turned it into a dessert. Just place the crepes on top of small, oven-safe bowl that are coated with a thin layer of oil and bake them at 400°F for 10 minutes or until they start to brown and get crispy. Strawberry Cheesecake Parfaits


Ingredients
  • 3 cinnamon graham crackers, crushed (1 1/2 ounces) (I used Cadia Organic Cinnamon Grahams)
  • 1 teaspoon finely grated lemon zest
  • 4 ounces Neufchatel cheese
  • 1 (5-ounce) container lemon low-fat yogurt
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (6 ounces) sliced strawberries
Directions
Place the graham crackers in a zip-top bag, seal bag and mash with a rolling pin until the crackers are reduced to fine crumbs. Mix the crumbs with the lemon zest and divide evenly between 4 small dessert glasses or jars. Set aside.
In a medium bowl, beat the cheese, yogurt, honey and vanilla with a hand-held mixer until smooth. Spoon mixture into the glasses. Top with the strawberries and chill for 30 minutes before serving.

  • 1/4 cup (60ml) coffee
  • 1/4 cup (60ml) unsweetened almond milk
  • 1/2 scoop (15g) vanilla protein powder
  • 1 tablespoon chia seeds
Directions
In a jar or small bowl, combine the oats, coffee, almond milk, protein powder and chia seeds.
Put the lid on the jar and give it a shake; stir if using a bowl. Chill overnight.
